Winter or summer, my children can eat ice cream all day long. To protect our finances, and their wellbeing, we had to explore healthier options. Here are some homemade and (hopefully) healthy ice cream recipes:
Smoothie Pops
Our go-to afternoon snack is a smoothie. We sneak some Nature’s Nutrition Kiddies Amazing Superfood Mix in there too. You can use any smoothie recipe, and any ice cream mould. We really love the Zoku Dinosaur Slow Pop Freezer Moulds.
SMOOTHIE RECIPE
Ingredients
2-3 bananas
½ cup of fresh or frozen berries
½ cup of plain yogurt
2 scoops of superfood mix
A little bit of apple juice or water if it’s too thick
Method
Blitz all the ingredients together with a stick blender or Nutribullet. Decant into a jug that pours easily. Fill the ice cream moulds, and pop it into the freezer until frozen (usually overnight)
3 Ingredient Chocolate Banana Ice Cream
This recipe is courtesy of the wonderful @theendlessmeal. You can make this ice cream in a blender, or a food processor – the methods differ slightly, and with the food processor it’s recommended that you add a bit of milk.
ICE CREAM RECIPE
Ingredients
4 frozen bananas, peeled
1/4 cup cocoa powder
2 tablespoons almond butter (can sub peanut butter)
1/4 cup milk of choice (only use if you are making this in a food processor)
Optional: chocolate chunks or chips, to sprinkle on the top
Place the frozen bananas, cocoa powder, almond butter, and your choice of milk into your food processor. Pulse until the bananas are mostly broken down.
Scrape the sides of the food processor then continue processing on high until the ice cream is smooth and creamy.
Either eat right away or freeze for 2 hours so that it is hard enough to scoop into cones. If using, sprinkle with chocolate chunks.
